Easy Thai Cucumber Salad
1/3 cup of rice vinegar
2 Tablespoons of sugar
1/2 teaspoon toasted sesame oil
1/4 teaspoon of red pepper flakes
1/2 teaspoon of salt
2 large cucumbers (peeled and sliced)
white and black sesame seeds
3 green onions, diced
1/4 cup of chopped peanuts
To start peel your cucumbers longwise. Place them in a bowl.
In another small bowl make your dressing. The Sesame oil adds so much flavor. Mix together the vinegar, sugar, oil, red pepper flakes, and salt.
Pour the dressing over the cucumbers. Garnish with sliced green onions and chopped peanuts.
Toss everything together.
Serve it immediately or let it sit in the fridge to chill for a bit.
(We did not garnish with the onions or the peanuts this time. But next time we will. We also quadrupled the dressing recipe. That way when you eat all the cucumbers in record time all you need to do is wash and slice more and add to the dressing.)
She's a little spicy for me but Mark loves it!
