Valentine Dinner

 I have been missing food from home.  Haven't been back for over a year because of COVID.  Haven't made any Jim's Spaghetti since Cassie was here years ago and ended up getting sick after eating dinner.  Let's just say that it wasn't a pretty sight and there are still stains on the carpet upstairs by the bathroom.


This will be my go-to bread recipe from now on.

Crusty No-Knead Dutch Oven Bread

3 cups of all-purpose flour
1 teaspoon of salt
1 teaspoon of dry yeast
1 1/2 cups of warm water

Combine dry ingredients then pour in warm water.  Using a wooden spoon stir the dough.  Cover and let rise to double size. (8-12 
hours)

Place the empty Dutch Oven in the 450-degree oven for 30 minutes.  While Dutch is heating up. turn our dough on a floured surface and form it into a ball.  Transfer the dough onto parchment paper and then place it in the Dutch Oven.  With the lid on bake for 30 minutes.  After those 30 minutes remove the lid and return the bread to the oven to bake for another 30 minutes.  Take it out of the oven and cool in the Dutch for about 15 minutes.


So good!


Jim's Spaghetti
4 pounds of ground chuck
3 medium onions, chopped
4 small cans of tomato paste
3 large 16-ounce cans of tomato sauce
2 teaspoons of garlic powder
4 teaspoons of black pepper
4 teaspoons of chili powder
4 teaspoons of salt
2 teaspoons of white vinegar
4 Bay leaves
1/2 cup of sugar

I usually put all the ingredients in a large stockpot.  But today I used my crockpot.  I just mixed it all up, put the lid on, and set it on low for 6-8 hours.
This recipe makes enough for 25 servings.
