Easy Sandwich Loaf

2 cups of all-purpose flour
6 tablespoon of whole wheat flour
2 1/4 teaspoons of yeast
2 Tablespoons of melted unsalted butter, melted
1 Tablespoon of honey
3/4 teaspoon of salt
1 1/4 cups of warm water

1. In a large bowl whisk together the flour, salt, and yeast, so it is well incorporated.

2. Whisk together warm water, melted butter, and honey in a liquid measuring cup until the honey is dissolved. 

3. Add the liquid mixture to the dry mixture stir until the batter comes together.  Then use a spoon or spatula to fold the dough over on itself 4-6 times until a more firm dough starts to form.

4. Cover tightly with plastic wrap and let the dough rise until it is about doubled in volume (30-40 minutes)

5. Preheat oven to 375 degrees and grease your loaf pan.

6.  Transfer the dough to the loaf pan, cover with plastic wrap, and let the dough rise until the dough gets about 1/2 inch below the lip of the loaf pan.  Uncover and let rise until the dough is level with the lip of the pan.  This should take about 30-40 minutes.

7.  Bale for 40-45 minutes, until the top, is golden brown.  Let the loaf cool in the pan for 15 minutes, before transferring it to a cooling rack or cutting board.

8.  Let it cool for a couple of hours before slicing.


The bread tasted good.  I'm not sure what happened but it wasn't very tall.  Not to worry it is almost gone!
