Good old southern sweet tea served in a mason jar...nothing could be better!
When we walked in there was one other couple.  I'm thinking on a Saturday night there is only one other couple in her for dinner...should we leave now.  Then I got to looking around the room.  Liked all the church pews, attendance boards made into menu for the wall...  Then there was the Howard Johnson feel to the room.  Very different.

It took about 30 minutes for the table to fill up.  We must have just missed the rush!

I do not like pimento cheese.  Mark  loves it.  So I'll try them...I loved them!  Going back for more for sure.

We had a big snow storm that shut everything down for about a week...but nothing like the Eastern seaboard got.  We had soups of all kinds that week.  I just couldn't seem to get warm.  This was one of our favorites...from FeedingBig.com
 
 

Italian Sausage Soup
 
1 pound of Italian sausage
1 garlic cloves, minced
2 (14oz) can of beef broth
1 (14.5 0z) can of Italian-style stewed tomatoes
1 cup of sliced carrots
1 (14.5 oz) can of Great Northern beans, undrained
2 small zucchini, cubed
2 cups of spinach-packed, rinced and torn
1/4 teaspoon ground black pepper
1/4 teaspoon of salt
 
In a stockpot or Dutch oven, brown sausage with garlic.  Stir in broth, tomatoes and carrots, and season with salt and pepper.  Reduce heat, cover and simmer another 15 minutes.
 
Stir in beans with liquid and zucchini.  Cover and simmer another 15 minutes or until the zucchini is tender.
 
Remove from heat, and add spinach.  Replace the lid allowing the heat from the soup to cook the spinach leaves.  Soup is ready to serve after 5 minutes.
 
Serves 6.
 
**I loved it just like it was.  Mark of course added some RedHot and loved it.  Michael is not a fan of any kind of soup.
 
 
 
 

Italian Sausage Soup

Trying to broaden our horizons and attempt to make some of the recipes I have on my Pinterest Board...Meat On My Bones...this week.

The Chicken and Broccoli Alfredo was the first on the list from Damndelicious.net.

 

Chicken and Broccoli Alfredo
 
2 boneless, skinless chicken breasts
12 oz broccoli florets
1/4 tsp of garlic powder
2 Tbs fresh parsley leaves
3/4 cup of chicken broth
8 oz of Rotini pasta
2 Tbs All-purpose flour
Kosher salt and freshly ground black pepper
1 Tbs Olive oil
2 Tbs unsalted butter
1/4 cup of heavy cream
3/4 cup of milk
1/4 cup of Parmesan cheese
 
In a large pot of salted boiling water, cook pasta according to package instructions.  Within the lst two minutes, add broccoli: drain well.
 
Heat Olive oil in a large skillet over medium high heat.  Season chicken breasts with salt and pepper, to taste.  Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side.  Let cool before dicing into bite-size pieces.
 
Melt butter in a skillet over medium heat.  Whisk in flour until lightly browned, about one minute.  Gradually whisk in chicken broth and milk, and cook, whisking constantly, until incorporated, about 1-2 minutes.
 
Stir in Parmesan until combined, about a minute.  If the mixture is too thick, add more milk as needed.
 
Stir in pasta, broccoli, and chicken.  Gently toss to combine: season with salt and pepper to taste.
 
Serve immediately, garnished with parsley, if desired.
 
**Michael loved it, scored an 8.  Mark and I both gave it a 5.  Sort of bland for our taste.


Chicken and Broccoli Alfredo

My nephew-in-law, who shall remain nameless sorta put a challenge out there.  He put a picture on Instagram of his delicious buttermilk biscuits.  I did the same with our breakfast biscuits (we both have way to much time on our hands due to a Snow Day).  Then a picture of eggs fresh from the nest from our house.  A stack of pancakes from his.....I think this might turn into something that we both will not be able to control.
